Simple Cooking: Thai Stir Fried Vegetables with Shrimps & Scallops
This post is dedicated to all my vegetables-loving friends out there! It's a very simple Thai stir-fry recipe that brings together many juicy greens on a single plate. Personally, I think it's hard to get more vegetable goodness in one dish than this! The seafood lover in me could not resist throwing in some shrimps and scallops but you can just stick to the greens if you like to. ;)
Ingredients:
- 1 carrrot (sliced)
- 1 broccoli (sliced)
- 4-6 small shitake mushrooms (sliced)
- 1 red onion (if the taste is too strong for your liking, you can also use regular white onions)
- Half a cabbage (sliced) or 1 cauliflower (sliced)
- Some bean sprouts
- 2-3 small green bell peppers (sliced)
- 1 large lime
Cook the broccoli and carrots separately with either butter or water till they are cooked or soft.
In the meantime, stir-fry the sliced onions and mushrooms with oil.

Once the onions are fairly cooked, throw in the cabbage and green bell peppers.

When the cabbage turned soft, add the broccoli, carrots and bean sprouts. Pour in 1 cup of water.
Add 2 tablespoons of oyster sauce, 1-1.5 tablespoon of fish sauce, 1-2 tablespoons of sugar and squeeze lime juice into the sauce.
Mix well and continue cooking over small to medium fire till dish is completely cooked.
To add a touch of seafood flavor to the overall taste, I threw in some shrimps and scallops.
