Chocolate Layer Cake - No Cooking Required
This is the easiest dessert you will ever make, and it tastes so decadent, you and your guests will never believe how quick and simple it is. There is no baking required for this cake, but I can guarantee that you will have fluffy, delicious sponge at the end.
Ingredients:
- Packet of dry, plain, round chocolate biscuits (no cream)
- 500mL of thickened cream
- Vanilla essence
- 1 tablespoon of caster sugar
- Chocolate or cinnamon to top
Method:
- Beat sugar, cream, and vanilla essence in a bowl until thick and fluffy
- Spread a little cream on the bottom of a plate
- Grab two biscuits, spread cream on both sides of one, and sandwich the other to it. Leave one cream-covered end exposed as the outside of the cake and stand the biscuits on their side on the plate.
- Keep spreading cream and sandwiching biscuits together to form a long log.
- Cover the outside of the log with remaining cream so that all the sides are completely covered
- Cover it very loosely with foil, it's delicate to be careful!
- Put it in the fridge and forget about it for, ohhhh, about 6 hours?
- Sprinkle your chocolate powder or cinnamon on top when you serve
- Make sure you cut it on the angle so that it looks pretty and you can see all the layers.
When you cut it open, you should find fluffy, spongy biscuits that have absorbed all of that rich, beautiful cream.
See, easy right?!

If we were to freeze this, would it have a similar consistency to ice cream cake?
@syedanoor@xanga - if you try this, i'd probably freeze it after the 6 hours in the fridge... otherwise the biscuit might not absorb the cream and get all fluffy. sounds yummy, though!

what is thickened cream? I looked up recipes for butter cream that requires "cream", but I never knew where to look inside the store, except for frosting to coolwhip!!

@xaannnniieex@xanga - Thickened cream lives near the whipping cream, probably in the same section as the milk/cheese/yoghurt. It has a thick-ish consistency, a bit like yoghurt or pouring custard. It comes in a plastic tub/cup with a lid you can replace. The stuff that comes in the carton is whipping cream, and is too runny (almost like milk).

my grandma made this type of dessert for us for all the holidays and our birthdays, she called it "icebox cake" it still to this day is my favorite, it tastes kind of like an oreo id say, idk.. its delicious.
