French Cooking for the Veggies Lovers - Ratatouille!
Today, I'll be bringing you guys to the South of France, where we'll enjoy a popular Provençal dish called "Ratatouille"! I'm gonna dedicated this recipe to all the veggies lovers here, especially, macphoto@Xanga, ZSA_MD@Xanga and my dear friend, Leny. :) Those of you who have caught the Ratatouille animation movie should be familiar with this dish by now. It's a really simple dish, filled with all the vegetable goodness you can get on one plate!
So, here are the ingredients:First, slice all the above vegetables.- 2 pounds of tomatoes
- 1 zucchini
- 1 eggplant
- 2-3 capscicums of different colors
- 1 onion
- Some fresh basil leaves
- Thyme, Salt, Pepper

Next, spread some olive oil on the pot and put everything in.
Pour in a cup of water. Add salt, pepper and thyme. Let it brew for 2 hours.
Voila! I have added some mushrooms, green olives & salami for extra flavor. ;) You can have it with white rice or bread. Both go extremely well with this dish.
So here is my personal all-time-favorite vegetables dish. What's yours? :)

We call capsicum "bell pepper" and while it's not traditional in ratatouille, it looks pretty tasty!
salami goes good with absolutely everything.

I am going to have to agree with you, this dish is delicious! It's funny because it's a summer time dish except I like it in the winter because it's stew like!
mmm I made a ratatouille for Thanksgiving a couple of years ago. It was so delicious!
