Happy July 4th to all y'all Americans!! I know it's traditional to cook out, but since we had company around who had to get an early start on the drive home, we had an Independence Day brunch today, including yesterday's barbacoa. We also made whole wheat buttermilk biscuits (for another post, I promise!) and a red, white and blue jello/ marshmallow salad!

I always feel kind of bad eating gelatin, but it's a traditional July 4th food around my house. It was pretty and extremely simple to put together. Really you just follow the directions on the box of Jell-o, mixing 1 cup boiling water and 1 cup cold water per box of gelatin. Do the colors on separate cookie sheets. When they're set (about 2 hours later) you can score them into squares and scrape them up with a rubber (or in our case, silicone) spatula.
Combine them in a bowl, and ring with marshmallows. It can rest overnight just fine without drying out (although the marshmallows may get a big stale if no covered, they will also take on some of the dye from the Jell-o which I find quite attractive).
Here it is after being mixed up and sitting over night, taking on some color. It looks a bit messy but it tastes divine!!
Plate it up! As you can see, my marshmallows are already conspicuously gone. Mmmm!

i was expecting something different. i like the colors, but the texture of the mashed jello is something i just cant do.
