I believe you are supposed to mix the ingrediants and smash. Smash, smash, smash, smash.
Mochi makers/machines remove that part I guess o vo;
mochiko ? is that rice flour ?
all we do is mix rice flour and hot water and sugar and keeeeeep on stirring. :)
mmmm mochi. mochi ice cream is my favorite. no idea how to make it though D:
My recipe:
3 cups of glutinous rice flour (I'm not sure how much that is to your mochiko
1/2 cup of sugar
pinch of salt
1 can of coconut milk
1/2 cup of water
Stir until smooth and pour into a greased bowl. Place bowl in microwave for 9 minutes on medium. Then while its still hot, pinch off a chunk and roll out out into a flat circular shape and place your desired filling ( i like red bean) in the middle and pinch close.
Be careful though. It can be very very hot!
i leanred from cooking mama! lol which is to say... idk but the recipe above me sounds pretty legit.

I make Mochi all the time! Easiest thing to make...
Ingredients:Mochiko [1box]Sugar [2 cups]Water [3cup]Cornstarch1 can of Japanese sweet bean paste [chunky or smooth-- it's personal preference]
- Mix Mochiko, sugar, and water into a bowl and mix well.- Pour into microwave safe casserole dish and microwave for 5 mins. Stir and microwave for another 5 mins or until the mixture is transparent.- Pour a good amount of cornstarch onto a place and dust your fingers well. [Batter gets very hot. So please be careful!]- Spoon out a spoonful of the batter and with your fingers, flatten it out. Fill with the sweet bean paste and bring the edges of the mochi together [will look like a parachute] until the pouch is closed. Shape into a round ball and dust well with corn starch.
This should make about 40 small mochi balls. :]
To make the green mochi, I use something call "Sook-garu" which is ground up leaves. It gives the mochi a slight earthy taste and a beautiful olive green color.
I've been experimenting with mochi too! Been making small batches of mochi almost every day for the past couple of weeks for quick family treat and have tried many recipes found on line and on the Mochiko box. This is the best one so far, it's from the amusing "cooking with dog" videos on YouTube. I've done fillings with red bean paste, peanut butter, Nutella, and strawberries so far - all good. Other recipes seem to turn out in a big gummy mass (esp. the microwave recipes) - too hard to work with.

Recipe for Ichigo Daifuku (Mochi)
Ingredients:
-1 cup sweet rice flour
-1/4 cup granulated sugar
-2/3 cup water (but really it varies, so get more just in case)
-canned sweet red bean paste
-6 whole strawberries
-cornstarch/potatostarch, any starch really
Directions:
Clean the strawberries and remove the stems and leaves and dry them off. Take a bit of bean paste and flatten it a bit in your hand, then wrap a strawberry in the paste, covering it completely (just don't use TOO much paste). Once all the strawberries are covered, you can set them aside, or even put them in the fridge to keep them real fresh. Mix the flour and the sugar in a pot or heat-resistant bowl. Slowly add the water, checking consistancy as you go. You want the mixture to be like smooth goo, with no lumps. For a few minutes, boil some water (not a lot of water) in a large pot with the lid on. Also, cover the pot lid with a towel. Put the bowl with the flour/sugar/water mixture inside the large pot. Put the lid on the pot, turn the heat up to high, and let steam for 15 minutes. Carefully remove the littler pot/bowl and turn off the heat. Use a wet spatula to get the dough into a lump and dump the dough onto a cornstarch covered pan. Sprinkle more cornstarch onto the dough. You have a short window to work with the dough, so right when it's not too hot to touch, cover your hands in cornstarch and split the dough into 6 even lumps. Flatten the lumps and wrap them up and around your strawberries, making sure they are completely covered. Voila! Ichigo Daifuku!
What??? There's so many places online to find this recipe!!!
I always make mochi! I make mochi ice cream and ichigo daifuku (bean paste with a strawberry in the middle). You don't have to use a microwave. You just mix all the dry ingredients together (except for the cornstarch flour). Bring some super hot water to a boil and pour it over the dry ingredients and mix. You can put food coloring in as well.
Put some cornstarch on your hands, pick up the dough and flatten it in your hands. Put the filling in the middle and cover it up until you have a ball. For ice cream, you have to make super hard ice cream balls!
@Miss_Donna_Speaks@xanga - I will try your recipe!
Here's the link!!! Pics and all!
our family makes mochi without the beans(because we love the mochi more ;P) and instead of rolling it into balls, we pour it into a pan, then afterwards we powder & cut it into rectangular shapes. Oh my gosh my favorite mochi though(that i make myself) is poi mochi! made with mochiko and sugar with poi, but is fried in oil, so delicious!
