Exams Are No Excuse To Stuff Yourself With Junk!
During this stressful time of final exams, post secondary students like myself are absorbed in our books and eating whatever we can find because we have no time or motivation to cook proper meals.
I have been guilty of surviving on coffee, energy drinks, and basically whatever is fast and easy to attain, but lets face it - stuffing junk in our bodies around exam time isn't exactly helping with the stress of studying. So, today I decided to whip up something fast, simple, and nutritious. Usually I don't like the taste of carrots, but this recipe completely surprised me!
Spicy Ginger Carrots with Rice
You will need:
- carrots grated
- asparagus chopped (optional)
- soy sayce
- ginger minced/grated
- cayenne pepperBest served with Rice
1. Grate carrots, you can also add in other vegetables if you want. I chopped up some asparagus
2. Mince ginger
3. Heat up oil in a pan and allow ginger to simmer for half a minute on medium heat
4. Mix in the grated carrots and other vegetables
5. Flavour with soy sauce and cayenne pepper
6. Cook covered for a couple minutes until vegetables are tender and serve with rice

I am all too familiar with those late nights stuffing my face with junk food...
I find I don't eat that terribly before exams.. but after I take a huge test I always reward myself with some type of junk.. normally cake. This looks really delicious though, but I'd still prefer my post exam reward be a piece of cake.

You go girl. "No excuses" is my mantra right now. I tend to not eat when I'm stressed.
Mmm that looks good. I'm recovering from a liver infection right now and get spurts of nausea frequently. Would this be okay on my stomach?
But yeah, I shake my head when I see these kids pulling all-nighters and drinking so much caffeine and eating junk food. I used to do the same, but ever since I've eaten healthy, taken my time well, and gotten a good nights sleep before my tests, I feel so much better and prepared for my exams.

Sorry, Prep, Shopping and Cleaning take up a lot of time...

It doesnt look very tasty though... :S Why not fried the rice also?
I've been in finals mode for over a week. Thankfully they end for me tomorrow but I am guilty of eating just junkfood. Yesterday was nothing but Chewy bars and lunchables.

I just finished my first week of finals time here at Harvard: had three 8-10 page papers due in one week (one a group project, two handed out only a week prior!)... I also am trying to pack up for summer, prepare for summer internship, club stuff, take my cat to the vet... between all that I forget to eat, and then have no time to shop... if I'm starving at 3am its whatever is near by hah... ohman... philosophy...
I don't have a kitchen, nor the money for those ingredients. Sorry. It's not like i stuff my face with pizza anyway
@Meowmeowkimmaee@xanga - me too! Ha ha, it kind of made me feel bad, but then I remembered I hadn't had pizza in like 3+ months, so I felt better again. O:)
that looks REALLY good, i might try that when i go home for the weekend. however, theres no stove in my dorm :(
i basically live off the healthiest things i can have in my dorm, haha
It's kind of hard to make homecooked things in a dorm. Your recipe looks really good, tho.
Exam time is also pantry clean-out time, meaning time to eat nothing but blah non-perishable foods that I've been ignoring on the top shelf all year. All I can eat is canned soup and bread that's been in the freezer for god knows how long.
Mmmm that looks delicious :d Except I'm allergic to raw carrots, so I couldn't use them. But I could probably subtitute that with another vegetable or something.
