I have just discovered my love for beets! They are so good and sweet and they definitely don't taste how they look. If you've never had beets, I definitely recommend you try them. I used to be scared of them too. I pictured them being bland and mushy, but they are the complete opposite. They are naturally sweet and I absolutely love their texture.
I made them myself for the very first time tonight and it was extremely simple. They are pretty cheap at the grocery store so I definitely see myself making these more often.
I followed this recipe and they came out perfect!
Preheat the oven to 425 degrees. Cut the greens away from the beets, leaving about 1/4 inch of stems. Scrub the beets and place in a baking dish (or lidded ovenproof casserole dish). Add 1/4 inch of water to the dish. Cover tightly. Place in the oven and roast small beets (three ounces or less) for 30 to 40 minutes, medium beets (four to six ounces) for 40 to 45 minutes, and large beets (eight ounces or more) for 50 to 60 minutes. They’re done when they’re easily penetrated with the tip of a knife. Remove from the oven and allow to cool in the covered baking dish. Cut away the ends and slip off the skins.
I just sliced them up and ate them with a tiny bit of salt. Next up; pickled beets! Pickled beets are great on a falafel sandwich The King of Falafel makes them that way so I may just have to do the same.

Beets are amazing - the best I have had was a beets salad with a very light vinegratte and goat cheese at a restaurant. Unfortunately I don't have the receipe :(.

My aunt used to babysit my brother and me on the weekends a few years back, and one day she cut up some beets and served them with Parmesan and/or Romano cheese. It's super easy, just buy some canned beets, drain the water, slice them (unless you bought the pre-sliced ones) and add Parmesan and/or Romancheese as desired. It's great!
