
I usually don't write posts... especially posts on foods that I almost never eat. But let's face it, when summer hits, it means time for slimming down. And even more.. when it gets warm, food starts losing its flavor [in the heat that is].
So I came home today from sitting in the sun for a school event picnic. It is 79 degrees out and I felt like there is a heatwave INSIDE my head. Trust me, I was in no mood for warm cooked food when I got home. So I reached for a salad and tossed in everything that might taste okay in it. And I discovered the most perfect combination.
Ingredients:
- Salad mix
- Thousand Island Salad Dressing
- Mangoes
- Eggs
- Shrimp
[okay, it didnt taste too great with the shrimp since i dont like throwing cooked meaty stuff into my salads]
MANGOES IN A SALAD. Whoa! that is MY perfect combo. What is yours?

i looove mixed greens, dried cranberries, gorgonzola cheese, grilled chicken, and this nice raspberry cabernet vinaigrette, its so delicious!

I can't eat lettuce...weird but true, all other greens get the go ahead, but lettuce is out...so I started getting creative with this a few years ago.
I love the prepacked cole slaw and brocolli slaw shreds. I often use those as a base, then dice an apple, diced pepper bell or poblano, spinach, no fat cottage cheese, diced avocado, some raisins, or chopped prunes, a sprinkle of sunflower seeds or pumpkin seeds, a couple dashes of black pepper, onion powder, Mrs Dash or powdered chipotle...two shakes of balsamic, toss and it's totally divine.
I make enough for my dinner tonight, and lunch tomorrow, saves me from chopping twice.
Does the salad in the picture have blueberries in it? Weird.

I really really love Greek salad w/romaine, kalamata olives, red onions, red peppers, cucumbers, and feta cheese w/a little olive oil dressing. I also really, really love any salad w/beans as the protein. I recently made a "Mexicali" salad w/pinto beans and a bunch of veggies - so good!
I love savory salads, so I don't care much for fruit salad or salad with some berries toss in.
Lately I've been in love with:
-Spring salad mix
-Blue cheese
-Walnuts
-Lemon juice
-Olive oil.
It's delicious. But the best salad I've ever had was I believe, spring mix, walnuts, apple pieces, feta or blue cheese (I don't recall which), and a balsamic vinegrette. Yum.

Hmm... since you like mangoes, here's a simple one for you.
Make a mango salsa and just throw it on top of your salad mix. That's all you need. You will definitely love the outcome.

I make a salad with avocados, corn, tomatoes, mozzarella cheese, and Italian dressing almost every day. It's so wonderful. That salad has changed my life.

I love elaborate salads, honestly my favorite food. It just sucks when you have to cook for yourself because the salad goes bad quickly :[

Ugh I'm so hungry. I do everything to not think about eating because I'm bored... Then I read all the food blogs. Can someone get a pregnant girl some chicken nuggets with sweet and sour sauce? Lol
@Jamie_Nip@xanga - I haven't tried the Morning Star brand yet, but I did just try some Boca Chik'n. I was impressed. Are the Morning Star's any better?
