  • Four Year Anniversary Dinner! (Putting My Skeelz to the Test)


    Julia Child had Paul...And I have Matt!  Not that I'm Julia Child. It's an analogy, see... you get it, right?

    Matt is my test runner for my meals, always has been. He's very honest with me and will not force himself to eat something he doesn't like. If he lies to me in fear that I'll cry or rip his head off, I can judge how much he liked it by what's left on his plate.

    He's very much into veggies. Like me, he avoids meat (unless high quality, free range, non-hormones, etc.) but doesn't claim to be a vegetarian. Cooking for him is a challenge but always enjoyable.
    So, our four year anniversary just passed (February 28th) and I decided to cook him a fancy schmancy Mexican meal.

    Sweet Spinach Salad:
    baby spinach, carrots and apples cooked in cinnamon and vanilla, baked pecans, topped with raspberry vinaigrette (I'll have to post the recipe for the pecans. I ate the leftover ones by themselves. DELICIOUS.)
    Veggie Quesadilla:
    avocado, Spanish style corn with red and green peppers, Monterey jack cheese, cumin, garlic, crisped with olive oil in a whole wheat shell (Matt took some leftovers into work and they gobbled it up. Have to admit this recipe is a keeper.)
    Tangy Mango Salsa:
    chopped mangoes, chili peppers, cilantro, tomatoes (very fresh, though I must say mango is the biggest pain in the ass fruit I've ever had to deal with in my entire life)
    Fresh Strawberry Sorbet:
    strawberry sorbet, fresh strawberries dipped in dark chocolate, garnished with a frozen lemon slice and cocoa powder (strawberries were a little messy, but the finished product was fantastic)
    Sweet and Sour Sangria:
    Sangria mixed with lemon lime seltzer
