Recently I made a birthday cake for my father. It came out OK. I am not much of a cook, but I couldn't afford a better present.
Trying to use cleaner ingredients, my original plan was to bake a carrot cake from scratch using a vegan recipe I found in a book of mine called
Sinfully Vegan. My plans changed when I got to the store and found a carrot cake
mix that had the exact same ingredients as the recipe.
So I took the cake mix, some carrots and apples and made an Apple Carrot Cake for my dad, modifying a
vegan recipe on the box. I didn't trust that recipe to come out right with no eggs, so I added
organic brown eggs. The result was moist and spicy. I had two layers and no frosting, so I put applesauce in the middle and powdered sugar on top.
A bit too spicy as it turns out, the cake mix turned out to have a hearty amount of cinnamon, which resulted in a strong base for the cake. My family thought it was all right but perhaps it was a bit heavy.
I'd like to try some vegetarian or regular dishes instead of the vegan recipes which are more complex and don't tend to come out as well anyway. There aren't any vegans in my house, thank goodness, and my father is a pesce-vegetarian. The search for food that I won't screw up goes on.
Any advice on a simple recipe I can try?

Start off with basic recipes, try them out, then add different ingredients next time.
Check out brands like Gardien, Sanitarium, etc. if you haven't already.
Vegetarian/vegan cooking is definitely all about trial and error, trust me!
That's sweet of you to bake a cake for your father! At least you've made effort! It looks yummy to me!
Kraft Dinner? Mix some grated cheese in and it makes it really thick and cheesy, you'd never know it wasn't homemade.
baked lamb/pasta dish. all goes in one pan, not much work since you just toss it in the oven :)
