  • The Veggie Explosion Quesadilla Recipe



    I needed to eat lots of vegetable with my dinner tonight because I have been really slacking in that department. The first thing that popped into my head were Veggie Quesadillas. I have a soft spot for quesadillas because they are so good and are so simple to make. I'm kind of obsessed with them and order them almost everywhere I go!

    Here is the recipe I used to tonight.

    Ingredients:

    2 large tortillas
    1 green bell pepper
    1/2 an onion
    1 cup mushrooms
    1 small can of sliced black olives
    1/4 fresh or canned diced tomatoes
    1/2 cup of grated cheese
    1 tbsp. olive oil



    Directions:

    Slice onions and peppers into long thin strips. Heat olive oil on medium heat in a pan. Saute up the green peppers, onions, and mushrooms. When they are soft and to the consistency that you like, put half of the mixture onto one side of the tortilla. Spread the half of tomatoes and olives over the top and sprinkle with half of the cheese. Use the remaining of all ingredients for the second tortilla. Fold over the tortilla and put on a cookie sheet. Place both quesadillas in a 400° oven for 5-7 minutes or until desired crispiness.

    Serve with sour cream and salsa.

    Serves 2
