I needed to eat lots of vegetable with my dinner tonight because I have been really slacking in that department. The first thing that popped into my head were Veggie Quesadillas. I have a soft spot for quesadillas because they are so good and are so simple to make. I'm kind of obsessed with them and order them almost everywhere I go!
Here is the recipe I used to tonight.
Ingredients:2 large tortillas
1 green bell pepper
1/2 an onion
1 cup mushrooms
1 small can of sliced black olives
1/4 fresh or canned diced tomatoes
1/2 cup of grated cheese
1 tbsp. olive oil
Directions:Slice onions and peppers into long thin strips. Heat olive oil on medium heat in a pan. Saute up the green peppers, onions, and mushrooms. When they are soft and to the consistency that you like, put half of the mixture onto one side of the tortilla. Spread the half of tomatoes and olives over the top and sprinkle with half of the cheese. Use the remaining of all ingredients for the second tortilla. Fold over the tortilla and put on a cookie sheet. Place both quesadillas in a 400° oven for 5-7 minutes or until desired crispiness.
Serve with sour cream and salsa.

I make quesadillas with corn and goat cheese - brown the corn in a pan over medium high heat for a few minutes, then mix in a bowl with enough goat cheese to make it all stick together. spread on a whole wheat tortilla - and i like to crisp them up on the forman grill with a spritz of cooking spray. they're really good with some salsa and black bean soup!
The idea of veggie quesadillas is all right, but I would go for other veggies. (Absolutely can't stand bell peppers, like the flavor but not the texture of onions.) Besides the mushrooms, I think I would use some sliced water chestnuts, maybe some bean sprouts and corn. And I might spread some refried beans on the tortillas before putting anything on them.
That look mighty fine to me.

@theonlytimes@xanga - I always use my Foreman grill for quesadillas. It's wonderful.
I usually do corn, barbeque sauce, and cheddar cheese. So good.
I love quesadillas because they can be made in a lot of different ways. Not to mention they are a very yummy, healthier, quick fix. Great recipe and picture! :)
