My girlfriend and I went over to a friends' house for dinner the other night. They made pork tenderloins and sent us home with some of the leftovers. I love that.
The pork had been marinated in barbecue sauce, then roasted and was wicked good. So I could have just sliced it thin, heated it up and eaten it, but I wanted a sandwich.

So I cut it into two bite chunks and put it in a foil pouch with some red onion, peppers and hot sauce. Then I cooked it at 350 for about 20 minutes, but before I opened it I shook it
around a bit to make sure everything was coated in the juices/sauce.
I put it on a toasted sub roll with some sharp cheddar cheese (there's more than it looks, but it's on the bottom).
Man, I love sandwiches. And this one was awesome.

great idea for leftovers. <3 sammiches. that one looks really good.
We just did this - my kids loved them. I think this could work for some other leftover meats as well.
This one is a no brainier, a sandwich is the best option for the pork leftovers, or maybe fried with some scramble eggs for breakfast of for dinner.
