Gluten free/casein free mac and cheese (VEGAN, too!)
Ok, ok, I know it sounds weird, even gross. But trust me on this one. I was skeptical at first, too, but I needed to find SOMETHING for my kids to eat that was both gluten and casein free and reminded them of the "kid food" they used to eat.
You will need:
1 bag of
Mrs. Leeper's corn macaroni(or other gluten free equivalent - I've heard quinoa is good too)
1/4 cup of Blue Diamond almond milk (original flavor)
2-4 oz of
Daiya cheddar cheese 2 tbsp Earth balance margarine
Cook pasta according to package directions, adding a dash of salt to boiling water. Drain pasta and rinse. Return pasta to pan and place over low heat on the stove. Add almond milk, Daiya and margarine and mix until margarine and Daiya have melted.

omg yes! one of my friends was recently diagnosed with celiac disease AND lactose intolerance! she'll love this recipe :D
never tried gluten free stuff. this looks good though.
Sounds so good, I have celiac so everything I love has had to be adapted. Most are hits, but I have had quite a few misses.
Yes, tried all the vegan cheese substitutes and all of them are the wrong side of disgusting, none of them resemble a decent piece of cheddar or even a 'cheese product' slice. I'm only vegan because I like the food so when I want real cheese, I eat it.
What's bad about casein?
@nowayout001@xanga - Some people are allergic. It's very similar to lactose intolerance. It's also possible to be a vegan and have celiac disease, so that would eliminate both dairy and wheat.

@SavonDuJour@xanga - Have you tried Daiya cheese? I hate typical vegan substitutes, but this one was good. It's not exactly the same in texture before melting, but afterwards, I can't tell the difference.
