  • Macaroni and Cheese - Gluten Free/Casein Free Recipe



    Gluten free/casein free mac and cheese (VEGAN, too!)

    Ok, ok, I know it sounds weird, even gross. But trust me on this one. I was skeptical at first, too, but I needed to find SOMETHING for my kids to eat that was both gluten and casein free and reminded them of the "kid food" they used to eat.


    You will need:

    1 bag of Mrs. Leeper's corn macaroni(or other gluten free equivalent - I've heard quinoa is good too)
    1/4 cup of Blue Diamond almond milk (original flavor)
    2-4 oz of Daiya cheddar cheese
    2 tbsp Earth balance margarine

    Cook pasta according to package directions, adding a dash of salt to boiling water. Drain pasta and rinse. Return pasta to pan and place over low heat on the stove. Add almond milk, Daiya and margarine and mix until margarine and Daiya have melted.
