  • Recipe: My Mama's Meatloaf



    As a child, meatloaf was a weekly staple in my diet.  My mother was a busy lady and didn't have the time to create extravagant meals.  So she turned to a simple meatloaf recipe to feed us kids during the week as did many other busy parental units or legal guardians.  Somewhere along the line, meatloaf got a bad rap.

    In the gourmet world, it was viewed as dried up and inedible.  Health advocates saw it as a lump of meat waiting to be digested and clog arteries.  To many children, it was a nasty routine dinner combined with the dreaded side of vegetables.  With all of these rumors floating around, no wonder it was so unappealing!

    In recent years, meatloaf has made a bit of a comeback but not to the level to which it was once favored.  Meatloaf can be exciting, healthy and delicious, the kind of meatloaf my mother used to make when I was younger. 

    My Mama's Meatloaf

    Serves 4

    Ingredients:
    1 pound of ground beef (as with all beef, to get the most health benefits, use grass-fed!)
    1 egg
    1/4 cup of bread crumbs (we just crush up fresh bread to keep it moist)
    1/2 tablespoon of garlic powder
    1 teaspoon of nutmeg
    1 tablespoon of fresh parsley
    1 tablespoon of crushed red pepper
    1/4 cup of scallions, minced
    Salt and Pepper to taste
    1 tablespoon of ketchup

    1. Preheat oven to 350 degrees
    2. In a large bowl, combine all ingredients except for the ketchup
    3. In an 8.5 inch loaf pan, pack mixture and pour ketchup on top of loaf
    4. Bake for about an hour - you can tell the meatloaf is cooked through when all of the pink is gone
