Who doesn't enjoy adding spirits to their ice cream from time to time? This is my favorite ice cream recipe, which is just a vanilla ice cream base, but the sweet, smoky flavors of Scotch Whiskey give it a whole different twist. Basically, this is a pretty standard vanilla ice cream recipe (I've tried a few, and I've settled on my personal favorite, that said, feel free to use the recipe you wish), and just add some Scotch. I'm including options for both "real" ice cream and vegan ice cream for you to choose from.
Ingredients: - 4 egg yolks or equivalent amount Ener-G egg replacer
- 1/2 cup sugar
- 1 tbsp vanilla extract
- 2 cups heavy cream of Soyatoo Organic Topping Cream
- 2 cups whole milk or FULL FAT milk substitute
- 3 to 4 shots Scotch whiskey (cheap blendeds work just fine)
Directions: - Combine egg yolks (or replacer), sugar, and vanilla extract in a small bowl and beat until the mixture is smooth and uniform in color. Set aside for now.
- Combine cream and 1 1/2 cups of milk (or substitutes) in a saucepan and cook the mixture on medium heat, allowing it to simmer, and bringing it almost to a boil (not all the way).
- In a large bowl, prepare an ice bath.
- Now do a back-and-forth transfer, adding the milk and cream to the egg mixture, and then once blended evenly, pour all of that back into the saucepan, and cook over low-to-medium heat until it thickens (a good way to gauge this is to determine when it will stick to a spoon). Add the remaining milk to chill it instantly, and also add the Scotch at this time.
- Now place in a medium bowl and immerse in the ice bath. Stir the mixture until it is chilled, and then transfer to a refrigerator for a few hours to let it completely chill. From here, place into an ice cream maker and freeze as per the directions listed on your ice cream maker.

I was all excited reading your entry and then I realized I will need an ice cream maker for this. sounds yummy though. I've had an icecream booze combination before though. just seperate and then combined. like a topping. sheridan's liqueur tastes awesome with chocolate or vanilla icecream. so does bailey's of course.

Of course, if you really want to get this frozen, you freeze the mixture by using liquid nitrogen.

Did you know?...Adding salt to the ice/water mix causes a temperature drop that slows the melting rate and increases the freezing rate [3].
The net result is that the ice melts more and more slowly after the initial addition of salt.
Love to try some of that.

My husband LOVES scotch, and I love to make ice cream...so I'll try this for him soon.
I have made Bourbon chocolate
and right now I have pinapple poblano sherbet in the freezer, that has a bit of tequila in it.
I also add a tindy dash of rum and amaretto to my peach sherbet...like a tablespoon of rum and a tsp of Amaretto per quart
and I have some vanilla gelato that has a bit of kaluha and Amaretto in it...I tend to use spirits more like extracts in the ice cream, just a hint that brings out the other flavors

That sounds good but I am not familiar with scotch.
Blackberry brandy over vanilla or coffee-flavored ice cream. Haven't tried any other flavored brandy but don't reckon I'd push peach away as a bad idea.

Anyway, i never really tried scotch or whiskey... the picture looks good though. Actually, i'll just take that chocolate cake!
