  • I Can’t Believe It’s Not Butter: Avocados

I really wish I could count myself among the numerous, admirable people who eat locally. I could try my hardest, but there is just one thing-- my kryptonite, if you will-- that I would never be able to give up or wait for: avocados.

This funny little fruit, raised in warmer climates such as those of Mexico, Chile, New Zealand, and California, is one of my favorite breakfast foods. Wait…breakfast?! Right, breakfast. Here’s my little secret to getting a decent serving of healthy fats and vegetables right when you wake up: Take a piece of bread. Pop it in the toaster. Take a halved avocado. Dig in with a knife. Spread the avocado flesh onto your bread. OK, got all that? Now take a bite. Tell me you can go back to butter after that.

Really, avocados can kick butter’s ass, although butter is of course delicious in its own right. Consider the benefits of the brilliant avocado: it can lower cholesterol levels and is high in potassium (60% more than bananas, potassium’s main spokesman), rich in vitamins B, E and K, and boasts a high fiber content. And now let’s turn to butter: yes, it is filling, but also full of saturated fats and is one of the main contributors to heart disease.

Have I convinced you yet? No? Well then…How do you use your avocados?
