My room mate and his girlfriend just got off the 'Master Cleanse' diet for a week and their last day consists of raw foods. They had plans to make carrot tuna and I was lucky enough to be around for the process of preparing and consuming. I wasn't sure what to think of this 'carrot mock tuna' but I figured it had to be tasty enough for someone to put all of this work into it for it to be worth it. It does require a lot of work, unless you have a good juicer, which will save a lot of time.
I must say I was quite impressed! It tasted really good actually, it had the texture and consistency more of a chicken salad than anything else. It didn't taste like tuna, it was little more sweet, but it was great between two pieces of bread.
If you are ever up to the challenge of juicing 5 pounds of carrots, then this is worth it. It's 100% raw and I enjoyed every bit of it.
Here is the recipe for the 'tuna' and the raw mayonnaise.
Ingredients: - 5 lbs of carrots
- About 1 cup cashews
- Water (eyeball it to get the consistency you want)
- ½ lemon, juiced
- 1 small garlic clove
- ½ tsp salt
- Apple cider vinegar to taste
- Olive oil (if desired) to taste
Directions:Juice the 5 lbs of carrots and be sure all liquid is removed from the pulp. Keep the pulp in a medium sized bowl and keep to the side. To prepare the mayonnaise, add all other ingredients into a blender and blend until smooth. Feel free to add any other spices to taste. Mix the mayonnaise into the carrot pulp and there you have it. Enjoy on bread, a wrap, or in between some lettuce.

id try it too! but it doesnt taste like tuna. maybe they should of added like dried seaweed in it or something...you know the sushi wrappers......processed into powder?
That looks interesting. I'm not a fan of carrots...so I would try it with caution I guess. haha
One weird thought that came to my head....not trying to be offensive, just curious, by why is vegan food always like some meat? I mean I guess I don't understand it being called "mock tuna" or "vegan burger" or "vegan turkey"? I mean couldn't they just call it what it is? I dunno...maybe it makes it more attractive to eat....but they're so good on their own...
I think it sounds pretty good. But I love carrots.

@xpika1x@xanga - I think in american culture that is what we are used to. Everything is very meat based so it's an easy concept to swallow. (pun intended)
and just because there are vegetarians doesn't mean we necessarily don't like meat. We may be against animals being killed, enviro impact, etc... yeah. if they had mock human id try it!! :D

Mock human...I bet that would come in a variety of flavors....sweet...bitter...sour..salty =P
i've been looking for a vegetarian tuna everywhere, and i was excited about this until it said 5lbs of carrots :(
Maybe it's just me, but I just cannot imagine carrots tasting like tuna or chicken.
btw - I eat my tuna without any mayonnaise so the idea of simply juiced carrots... ugh... not very appetizing.
My mom makes some amazing vegan food (we have either all meat or vegan, no such thing as vegetarian). She can imitate any kind of food: beef, pork, chicken, and especially fish! All it is is seasoning! But the base she uses is this kind of pressed tofu (looks like sheets when you find it in Asian stores).
I remember tasting some "fish" from her plate without realizing it was her "vegan" days (she eats on certain days in the lunar month) and when she told me to make sure to use a clean pair of chopsticks if I want to try another piece, I was stunned that this delicious piece of "fish" was tofu!!!!!!!
I HAVE to find out how to make these things because it is it's a lost art!!!

I found bulk carrots on sale last week, and they were so cheap I bought a bunch. Then I was stuck with a fuckload of carrots in my fridge, and nothing to use them with. Thanks for this recipe!

@tigerdauphin@xanga - Near my college campus, there is actually a vegetarian restaurant owned by an old Asian couple that has just about EVERY type of faux meat. My dad, who eats meat, tried their vegan shrimp, and loved it.
I want to know how they make it too!!!
