What makes a great sandwich? In my opinion, it's keeping it simple, but having a few key ingredients. A typical sandwich for myself will include some kind of deli meat with a slice of cheese in between two pieces of bread with mustard. Two things that make a sandwich so much better is adding lettuce and serving it on a bulkie roll. I love lettuce on my sandwiches, it gives it a nice crunch and it just feels more complete.
Unlike the picture, I am not a huge mayonnaise fan. I don't really enjoy the flavor on sandwiches, it detracts from the rest of it and all you end up tasting is the mayo. No tomato for me either!
Of course these aren't the only types of sandwiches out there. Let's not forget about the great vegetarian combos. One of my favorites is grilled vegetables and hummus. Hummus always makes a boring sandwich delicious. I've also tried eggplant, mozzarella, and roasted red peppers. I believe there are so many more options with a vegetable oriented sandwich. Seriously there are endless combinations and they are way better for you!
Then there's the good'ol peanut butter and jelly. I had a phase last year and that is all I would eat for lunch. It was great, so cheap, but also filling and satisfying. I will only eat the natural peanut butter though, it tastes a whole lot better than JIF.
One of the BEST sandwiches I've ever had was actually a bagel sandwich. It had Bacon, Cream Cheese, and Avocado on a Bagel from a place called La Bagel Delight in Fort Greene. I can't believe I haven't recreated it! Ohhh how I swoon over that sandwich!

Love me some sourdough bread. Turkey and provolone on sourdough. sometimes to switch it up a bit I'll add some salad dressing!
I love pesto sauce on my sandwiches. Chicken or turkey, I think, goes awesomely with pesto, and I hate pretty much any other condiments (mayo, mustard, ketchup, all those...nay.)

peanut butter jelly
ham cheese mustard, lays chips (inside the sandwich to give it a crunch)
peanut butter mayonaise ( my dad made this creation and i love it... don't judge without tasting it!!)
bacon lettuce tomato mayo
turkey mayonaise cheese onion tomato and lettuce
grilled chicken ranch dressing, onions, lettuce tomato
garlic/onion/spinach bagel sandwich with creamcheese salmon capers and pickled onions
grilled cheese toasted sandwiches (not complete unless accompanied with tomato soup)
italian sausage with caramelized onions and mustard in a hot dog bun (if that's considered a sandwich...)

When I make sandwiches, I usually use whole wheat whole grain bread or parmesan bagels. They usually consist of meat(roast beef, chicken, turkey deli meat, or vegetarian burgers), cheese (my favorite is cheddar), italian seasoning blend on the cheese, grilled onions, and a some leaves from a bag of salad. I'll use some sub sauce (herb flavored oil), or this creamy basil ranch from the specialty food section of the grocery store, or even mustard in them as well.
The weirdest combination I've had would have to be a peanut butter and cheddar cheese sandwich haha.

I love ham and pastrami sandwiches. They should all have lettuce, tomatoes, honey mustard, mayo, and crispy bread.
I like avocado instead of mayo. Hummus in a sandwich sounds REALLY GOOD, now that you mention it.

The more variety of flavors, the better, I say. I once had a sandwich with the normal fixin's like lettuce, tomato, ham, cheese, and mayo, but I also added peanut butter {to one slice of bread} and avocado slices and red onion slices.
Peanut butter and jelly ftw! My mother makes these fantastic grilled egg and cheese sandwiches. It's kind of like that posh French croque-madame sandwich, except the egg is cooked beforehand and not placed on top.
And I love a good tuna sandwich. I consume tuna way more than I should. I like mixing it with about 1/2 a tablespoon of mayo and a dime-sized dollop of mustard, some salt, and a lot of black pepper.And then there's cheese, romaine hearts, and butter lettuce. It sounds kind of plain but I really like it.My boyfriend knows just how to make me a sandwich. =]
I'll eat buffalo chicken, turkey, salami, peperoni... really anything except ham and bologna with a slice or two of white american, mozzarella or provolone, some lettuce, tomato, and mustard... A LOTTT of mustard. I love mustard. It's weird, but I could seriously eat the stuff out of the jar.
As for veggies, the eggplant sandwich you mentioned is like my favorite thing. Eggplant is my favorite food-- any way you can cook it, I'd eat it. =] So any veggie sandwich with eggplant in it, I'd be willing to try.
And I completely agree with your mayo statement. It's icky-tasting in sandwiches. In fact, the only way I'll eat that stuff is some sort of salad. Potato, macaroni, egg, etc. But I'm also strange in that if I have egg salad, it can't go on a sandwich. XD I have to just eat it with some salt and pepper, by itself. Or potato and egg salad. Sooo good. =]

Red onion and mustard go great on every sandwich. I love red onion, BBQ sauce and peanut butter on a sweet roll. Mmm.
The largest ingredient in your sandwich is the bread, so make it a good one. Spring for the pricier breads, they're worth it. Store brand white bread is for losers!

This was the best sandwich I've ever created I think. Yes, pretty simple, and I personally love some good spice and fresh herbs:
ham (or turkey), pepper jack cheese, jalepeno ranch, chopped fresh herbs, between two slices of bread, grilled to perfection.

My boss made one of the weirdest sandwiches I've ever tasted. It consisted of wheat toast, peanut butter, mayonnaise, green olives, and red onions. I don't like green olives, but I would eat them on that sandwich - don't knock it 'til you've tried it.
Margarine and Vegemite or Turkey and Cranberry sauce. :)
