Here is a very nice vegan soup/stew recipe that is not only a tasty way to welcome in the New Year, but reflects our wishes for a prosperous one – financially and healthwise.
The dollars and cents part refers to the gold coins of carrots and the green leafy bits of kale that give it the appearance of having dollar bills and gold coins in it. Enjoy!
Ingredients:- One very large or two medium onions
- Two large stalks celery
- 2 lbs potatoes,not sweet potatoes (I use red, but use whatever you like)
- 1 can white beans
- 4 cups water or veggie broth
- 2 bay leaves
- 1 1/2 cups carrots cut into "coins" about 1/4 inch thick
- 1 quart chopped fresh kale leaves or other firm greens
- 3 Tbls olive oil
- 1tsp caraway seeds
- 1/2 to one tsp ground mustard seed or prepared mustard
- 1/2 tsp toasted sesame oil (optional, but it gives a nice flavor)
- salt and pepper as desired
- other seasonings as desired
Dice onions, cook until golden brown in the olive oil in a large pot. Add celery and cook to soften. Add 2 cups of water, bay leaves and caraway seeds, simmer for 15 minutes. Cut potatoes into medium chunks, add to pot with two more cups water. Simmer till potatoes are soft. Add can of beans. Stir around, the potatoes will begin to fall apart, that is ok, Turn heat to very low to prevent burning and sticking. About 25 minutes before serving, add your carrot coins, check for seasoning, adding the sesame oil, salt, pepper and other herbs/seasoning as desired.
Add salt, pepper and other seasonings to taste. Remember to keep the heat very low to prevent burning and sticking, because the softened potatoes are prone to stick. Add more water or broth if necessary, but you do want a nice thick hearty stew, so don't overdo it. Five minutes before serving, stir in kale. It will wilt but remain bright green.
Serve it up!

Oh this is yummy!
I remember when i was 10 years old I suffered an accident and I lost so much blood I needed a transfusion. Weeks later I had to drink soup three times a week in order to recover and since that, I can't stand soup! Well, if there was some kind of generic viagra soup or something similar I would... but there's none like that!
