I had to try this after watching an episode of Martin Yan on public television. His theory of placing the fish this way during steaming comes from the fact that steam is uniformly distributed throughout the fish, compared to the usual way where the fish lies flat on the plate when steaming, in which one side (side touching the plate) cooks at a different rate than the other side (side facing up). What do you think?
Steamed Whole Seabass
Ingredients:- Ginger
- green onions
- tomatoes
- mushrooms
- one "live" sea bass
Directions: Steam for 10-15 mins depending on size of fish.

Seems very interesting. Worth a try. I've always steamed fish the conventional way, and this method makes a whole of of sense for the purpose of even cooking.

anyways simple and easy way of cooling ^^
my parents used to steam bass in the microwave all the time when i was little! then they poured soy sauce and sesame seed oil on it, and added ginger. it was <3 but we don't eat it now.. sadly.

It makes it more interesting, that's for sure. Though the fish looks like he's screaming when he doesn't have the thing in his mouth. Looking at this presentation makes me laugh.
