Recipe: Healthy, Hearty and Delicious Mexican Wrap
I hate tacos. But I love when the question 'What's for dinner?' forces me to be resourceful. So I made my own mexican wrap, and when I ate it, it tasted like flavor dynamite exploded in my mouth. I hopped on the flavor train with a one way ticket to deliciousville. Here's how it's made:
Start with whole grain wrap
Bottom layer: Saute jarred roasted red peppers cut into strips, onions, minced garlic, pepper, dash of chili powder.
Middle layer: Shredded part-skim mozzarella, a pinch of crumbled feta and half a sliced avocado.
Top Layer: Special sauce made of chopped cucumbers and tomatoes, one tablespoon of sour cream and one teaspoon of stone ground spicy mustard, plus a dash of lime.

Looks delicious! Though I would recommend roasting your own red peppers--very easy to do, tastes better, and has way less sodium.
