These are surprisingly easy.
You can get chocolate chip cookie dough in a tube to make this easier, but because I don't believe in chocolate chip cookie dough in a tube, I recommend starting from scratch.
Start with your favorite chocolate chip cookie dough recipe. Or your mom's favorite. Or your grandmother's favorite. And pack it into frozen concentrated juice containers. Freeze the dough for at least six hours or overnight.
The next morning preheat oven to 350 degrees. Make the cheesecake mixture:
- 8 oz block of cream cheese, softened.
- 1 egg
- 3/4 cup of sugar
- 1/2 t vanilla
And whip with mixer.
Then pull the dough out of the freezer use the medal lid on the juice container to push the dough up and cut into perfect circles. Like this.
Spoon about 1-2 Tablespoons of cheesecake mixture on top of cookie dough. Don't make too thick of the cookie will cook before the cheesecake will. Just enough to cover it. Put in oven for 8-12 minutes. They are done, when you can put a toothpick in the middle of a cookie and cheesecake batter doesn't come out on it.
When they completely cool to touch. Melt caramel. (Or make your own from scratch) And drizzle over the top. Sprinkle with mini chocolate chips or chocolate shavings. Use Chocolate bark or a chocolate bar and a old potato peeler is the easiest way.
