I haven't had mac and cheese in a long time, primarily because vegan cheese substitutes fall short. However, today I challenged myself to make a sauce out of nutritional yeast over same back and forth chatter with Chow.
The result is truly yummy, and is done in less time then it takes to cook macaroni. Here's my method:
Ingredients:- 1/4 cup flour
- 1/4 cup nutritional yeast
- 1/2tsp salt
- 1/4 tsp garlic powder
- 1 cup water
- 1/8 cup margarine
Directions:1. Combine all dry ingredients in a sauce pan.
2. Add water and stir for one minute over medium heat until sauce begins to thicken.
3. Remove from heat and add margarine, stir until well combined.
4. Add to pasta, top with pepper and be delighted!
This was seriously wonderful, a nice easy comfort food (boy did I need it tonight) and takes the same mount of time as making commercial Mac and Cheese does. The "cheese" gets sticky as it cools, in a stringy cheesy way as well!

I admire the innovation you have in making these Vegan dishes; especially in the use of the Nutritional Yeast in making the sauce.
Something I wanted to mention to anyone reading this who is thinking about trying this sauce is that it's not only usable in this application -- Nutritional Yeast has a parmesan-ey flavor, and melts readily; with a reduction type sauce, you could easily make this into a replacement Alfredo, Mornay, or Bechamel type sauce that could be used to top flatbreads or pizza dough along with other vegetables, and then baked as a pizza.
This looks so good. I've been meaning to try some vegan recipes and I think I might start with this one. Here's hoping I don't ruin it.

I guess micro-organisms are okay for vegans to eat, but slightly larger organisms are where they draw the line.
I'm sure it's delicious but right now it looks like cut up intestines and barf.

@salvatruca_stalking_havok13@xanga - i think it would be very hard too... just don't go overboard on garlic powder, I accidently put way too much in (this posting has the reduced amount) and it was not nearly as good, also if it is for just yourself, I would half this... mind you the sauce does keep in the refrigerator. @methodElevated@xanga - yeast, like mushrooms, are not considered animal in nature though they are both micro-organisms. The object is to do no harm through my diet, yeast does not look at me, nor have a heart beat, nor scream during the preparation process it takes to get to my plate. Quite like the other vegetables on my plate (which have more cells then yeast I might add) there is no blood on my hands or in my system from consuming it. No suffering went in to cultivating it.

Seriously, thanks, who knows how long it would have taken me to decide to attempt this if it wasn't for your words of encouragement, or if I ever would have! *gasp*I have made vegan mac and cheese before, but it called for cashews. It was amazing! Looking forward to trying your recipe :O)

Would it be better to replace water with some kind of non-dairy milk?
I've been wanting to try out mac and cheeze for a really long timebut since most recipes are very high in fat involving 1/2 of Earth Balance or 1 c of cashews.But I will definitely try this one.@gloria_0418@xanga - I would not suggest the "milk" in this, it tasted fabulous, was mighty thick, and had an authentic cheesy taste that wasn't over powered by soy or any other conflicting flavours.
