Recipe: J's Tuna Melt
It's one of those days when I don't feel like cooking up a storm in the kitchen. I just wanted to make something that was easy and simple. The first time I had a tuna melt was made by a friend of mine and it blew me away how something so simple could taste so wonderful.
Ingredients:
- french bread
- 1 can of chunky light tuna flaked
- chopped artichoke hearts
- diced banana peppers
- halved capers
- Tabasco sauce
- swiss cheese
- salt and pepper.
Directions: In a bowl, combine tuna, artichoke hearts, banana peppers, capers and mix together. Add a dash or two of tobasco sauce (or more if desired) and season with salt and pepper. You could also add diced tomatoes, diced celery (for that nice crunchy texture), and chopped herbs such as mint or basil. (I forgot to add tomatoes and I didn't have any herbs at hand).
Place some of the filling on top of a slice of french bread.
Top it off with a slice or more of swiss cheese; just use enough so that the entire surface area is covered by a single layer of cheese.
Next, place in oven to toast so that the cheese melts and then you will have a delicious tuna melt which is great as a snack or as a meal! =)
