Recipe: Cranutkin Bread
Here it is! My first written recipe. It's called "Cranutkin" because it has cranberries, nuts (pecans), and pumpkin in it.
Ingredients:- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, lightly beaten
- 16 ounces canned pumpkin
- 3 ½ cups flour
- 1/3 cup chopped pecans
- ½ cup dried cranberries (chopped or unchopped, you pick)
- 2 teaspoons salt
- 2 teaspoons baking soda
- 2 teaspoons orange zest
- 1 teaspoon baking powder
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg (optional, because I never have any)
- 2/3 cup water (half is 1/3)
Directions:- Butter and lightly flour 2 9x5 loaf pans or a large 13x9 baking pan.
- In a large bowl, stir together sugar, oil, eggs, and pumpkin. (wet ingredients)
- Combine the dry ingredients, including the cranberries and pecans, in another bowl.
- Mix the dry ingredients into the bowl of wet ingredients, adding the water in increments as you go.
- Pour the batter into the pan(s).
- Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
- Let stand for 10 minutes to cool.
Optional: Orange Cream Cheese Glaze
Ingredients:
- 1 cup softened cream cheese
- ¼ cup fresh orange juice
- ¼ cup honey
- ½ vanilla extract
Directions: Beat glaze ingredients at medium speed with an electric mixer until it is creamy.

While this looks incredibly scrumptious I simply cannot get past the 3 cups of sugar. OMG! I'll try making it using less and see if it produces as beautiful of a cake as pictured

@wengerd2003@xanga - You can definitely use less sugar! My mom thought that my bread was more like a cake, actually. =)
Try substituting some of the sugar for honey or applesauce (and tell me how it turns out!). For all you vegans out there, you probably already know of applesauce as a good substitute for eggs as well.
