Recipe: Berry Good-for-You Waffles
Whole wheat waffles with flaxseed, anyone? How about with some berry-good syrup?
I'm making my husband breakfast. He's still in bed, so I am quietly cooking and then sharing the recipe. Here it is:
Ingredients:
Waffles:- 2 tablespoons flaxseed
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1/4 cup toasted wheat germ
- 2 tablespoons sugar (or Splenda, as usual)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups fat-free milk
- 3/4 cup egg substitute
- 1 1/2 tablespoons canola oil
- 1 teaspoon vanilla extract
- Cooking spray
- 1 1/2 cups frozen blueberries
- 1 1/2 cups frozen unsweetened raspberries
- 1/2 cup light or sugar-free maple syrup
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Directions: To prepare waffles, place flaxseed in a clean coffee grinder or blender; process until ground to measure 1/4 cup flaxseed meal. Set the flaxseed meal aside. Lightly spoon flours into dry measuring cups; level with a knife. Combine the flaxseed meal, flours, wheat germ, sugar, baking powder, and salt in a large bowl; make a well in center of mixture. Combine milk, egg substitute, oil, and vanilla; add to flour mixture, stirring just until moist.Coat a waffle iron with cooking spray; preheat. Spoon about 1/4 cup of batter per 4-inch waffle onto the hot waffle iron, spreading batter to edges. Cook 5 to 6 minutes or until steaming stops; repeat procedure with remaining batter.
To prepare syrup, combine berries, maple syrup, and ground cinnamon and nutmeg in a saucepan. Cook over medium heat until thoroughly heated. Serve warm over waffles.
I did not have enough frozen fruit on hand, so I cut it down a bit and used some dried fruit that I had. It was still delicious, and even more so with a dollop of non-fat vanilla frozen yogurt. Since we normally just eat cereal or eggs on weekdays, cooking late breakfasts for each other on weekends is something my husband and I love doing. Do you do this?

I love getting up early on a weekend and making breakfast for someone still sleeping. Most people like sleeping in. I like it too, but I like serving someone a good homemade breakfast full of warmth alongside a hot cup of Kona Coffee even more.
It seems so few people do these kinds of things for each other these days. It's nice seeing people that do.
that's so sweet.. that looks really good! i love waffles, i put chocolate chips on mine, but i guess that would cancel out the good-for-you part haha
I like to make breakfasts. We do not do it very often, but when we do it is a nice event where we sit together. One of my favourite things to do is make breakfast for my family when I am home. It's a nice break from cereal or toast.
Aww, your lucky husband! I love waking up to breakfast that somebody else has made for me (unless it's crepes. Crepes need to be made together, it's a rule). The waffles look delicious!

When we both had a day off from work and school, my ex boyfriend and I would sleep in and then make a huge breakfast together and then eat :] It was wonderful :]
I fail at keeping my waffles crunchy. They only last for about 1 minute.
