  • Recipe: Voulez Vous Prendre Le Petit Déjeuner Avec Moi? Eoufs en Cocotte

     
    FYI, I don't normally eat breakfast, mostly because I'm usually not hungry in the morning, that plus the fact that my mornings are usually rushed so I don't have that much time to make breakfast.  Sure, I can eat cereal, but nothing is better than a warm cooked breakfast.  Therefore, when I do have a chance like today, since I don't have work due to it being a holiday, I would take the effort to cook myself breakfast.
     
     
    Ingredients | 1-2 eggs, onion, salt, pepper, slice of bread, thyme, olive oil, heavy cream
     
    Heat a small skillet over medium heat and add a bit of olive oil. Add onions, salt, pepper and saute for 10 minutes or until onions are tender. 
     
    Increase heat to med-high and add water.
     
    Cook for 5 minutes stirring frequently.
     
    Put onion mixture in a ramekin.
     
    Cut a slice of bread into cubes.  Drizzle with a bit of olive oil and sprinkle some thyme.
     
    Spread bread cubes in an even layer on baking sheet, and bake for 10 minutes or until colored and a tad crisp; stirring after 5 minutes.
     
    Add croutons into ramekin.
     
    Break an egg or two into the ramekin on top of croutons.
     
    Pour a bit of heavy cream or half and half milk over the eggs.
     
    Place ramekin in a roasting pan an pour boiling water in the pan to fill halfway up the sides of the dish. Bake at 350F for 15 minutes.
