My mother and I always have red delicious apples at our house. We buy them from Costco in bulk because I now follow the "apple a day" rule. This time, though, we have a feeling that Costco had a delayed shipment of apples and now that they have finally arrived, this batch is now over-ripe and mushy.
How do you be-rid your home of mushy apples without wasting or adding to your waistline? (I know you're probably thinking apple pies...)
I already came up with one idea. This weekend I made apple oatmeal. I cubed a third of the apple and basically minced the rest of the fruit, then stuck it in water and boiled it for 10 minutes. I added one-third cup of oatmeal, just less than a teaspoon of cinnamon and tablespoon of sugar. I simply stirred and added water until it got to the consistency I wanted. All in all it was about 260 calories.
So... any other suggestions?

with all the genetic alterations to the red delicious strain, they don't taste like anything anymore. I much prefer gala or empire apples, or something harder for baking.
I use the over-ripe ones for mulch. they help with pitching practice too.
Apple oatmeal sounds quite delicious.
Maybe in a smoothie? I'm not quite sure what to do because I always eat the apples I have unless they're downright rotten.
Apple pie, apple cake, apple juice, apple sauce, apple tarts, apple pastry bars, lol. Plenty of apple recipes out there.Â

That's a good idea with the oatmeal, I'll try it next time I have old apples. Sorry, I don't have a whole lot of suggestions --if it's a harder type of apple, you can definitely bake it in breads/cakes/pies. I'm just not so sure about red delicious though, they're generally too soft to be a good baking apple. Or at least the one time I tried, it turned to mush.

Smoothie. Or you could heat it up in the microwave with a little bit of cinnamon. That's always really good. :)
I like Quaker apple cinamon oatmeal and gala apples. If I have hard type apples and pears, I just cube and boil them in water, then add a little bit sugar. This is my grandma's recipe. She used to make it when I was sick.
apple sauce sounds like a good idea... maybe baked apples? I've never tried it w/ softer apples, but it may work.

Take them back to Costco --- it's part of their guarantee to take anything back that is not the best quality of anywhere. I hate to return things like that but had bought 2 packs of asparagus a while back, and they looked great, nice and skinny, not woody, etc... but it was the worst tasting asparagus I had ever eaten (the cooked asparagus was left on the 3 adults plates and thrown out) ... they not only refunded both packages, but said that a LOT had been returned that day and the day before so not to feel bad about it.
My mom always makes apple sauce with left over apples, so good.
Never understood what mealy means though, heard it several times lately.
When they are mushy, I add them to a rice pudding recipe (must have cinnamon, too). I will freeze it until I'm looking for a too sweet treat, and then remember the rice pudding in the freezer with that good stuff in it. It's much lower in calories than a layer cake, for instance.

Apple bread or even muffins. A simple apple sauce(minus the sugar) can be added to most cakes and it not only adds flavor but it helps to keep them moist.
You could bake them with cinnamon and sugar... Yum.
But I totally understand, mushy apples SUCKKKK.
