  • Recipe: Fire and Ice Pickles



    I don't normally post recipes on Xanga, however, as it gets close to the holidays, I figured I'd post one of my favorite before-dinner snacks.

    Though they might not be good for my blood pressure, I'm a huge fan of pickles of all kinds. Dill, bread and butter, hot, garlic, etc. I love them all. However, probably my favorite version of pickles are the ones I make for parties, family gatherings, and other occasions of the sort. These are called "fire and ice" pickles, and are sweet and hot.

    Don't worry, they aren't hard to make. You'll see several variations of it on the internet, but they're basically all the same. Here's what you need:

    Ingredients:
    • 2 jars (64 ounces) of drained dill hamburger chips*
    • 2-4 cups of sugar (depends on how sweet you want it)
    • 1/4-1/2 tsp crushed red pepper (adjust according to your heat tolerance)
    • 3 garlic cloves (peeled)
    • 1 tbsp of hot sauce of your choice
    Directions:

    Now, making these bad boys is very, very simple. In a large bowl, combine drained pickles, sugar, crushed red pepper, and hot sauce. Let this sit for a few hours at room temperature while the sugar draws the excess juice out of the pickles. Finally, divide pickles and juice into three smaller jars, and add a garlic clove to each jar.

    Put them in the refrigerator and leave them. They taste best if you let them rest for about a week. Of course, you can adjust the amount of each ingredient up or down depending on your palate's preference and whether or not you want balance, a focus on the sweet, or a focus on the spice. Goes well on an olive platter or as an alternative to chips with a sandwich.
