On a message board that I frequently contribute to, one of the members had a ton of apples and wanted to know what she could make with them. Another member offered up her delicious apple bread recipe, and it seemed so easy that I had to make it.
Mmm... The apples melt so they don't taste so hard. It's just... ooooh so good.
Ingredients:- 3 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 large eggs
- 1 cup vegetable oil
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 3 cups diced apples
It helps to get your ingredients together before you start baking or else you'll be running around going "AHH!! WHERE'S THE CINNAMON?!"
Directions:1. Preheat oven to 325 degrees. Grease two 9 x 5 x 3 baking pans, although I actually used much smaller pans.
2. Peel and dice the apples. Set aside.
3. In a medium bowl, combine flour, salt, baking soda and cinnamon.
4. In a larger bowl or in your mixer, combine eggs, oil, sugar and vanilla.
For the love of Pete, use a mixer. Mixing this by hand was difficult. Mix well.
5. Check out the results of your mixed up bowls.
6. Slowly add the flour mixture until just mixed.
7. Fold in the apples to the mixture. If your mixture seems a bit dry, the apples appear to make it "wetter."
8. Spoon mixture into loaf pans to bake.
9. Bake in the 325 degree oven for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean. I left it in the oven the entire time.
10. When done, marvel at how good it smells.
11. Cool in the pan for about 10-15 minutes, and then remove to cool on wire racks. You can freeze them for future consumption, just wrap tightly.
12. Enjoy!

A note: Especially for applications like these, as mentioned, mixers come in very handy. Especially coming into this Christmas season, Kitchenaid Stand Mixers tend to go on sale. I have seen the 4.5 quart versions as low as $150 or so, making it a great time to pick one up. If asked though, I would still recommend investing in the standard 5 quart model for a little more though.
sounds delicious... the recipe is actually quite similar to the carrot cake i just made and it was melt in your mouth good. I used pumpkin instead of eggs in it, i think when i attempt this i will use 3/4 applesauce instead, it will make it extra apple-y, but with the same result.

i just made this, it's SO good. however i did add 1/2 a teaspoon more of cinnamon.
