Daily Q: Do You Have a Signature Dish?
A signature dish is one you make so often and so well that it becomes a part of who you are. It doesn't have to be completely unimitable; just something you're especially good at making that sort of defines you as a cook. Maybe it's a seemingly standard lasagna with a simple but secret twist, or a homespun cookie recipe that you've seen fit to slap your name, or whatever. Just something that tastes (not literally) like you.

i don't have a signature dish, i just love to make anything and i have to be in the mood for it.

You know what's sad is I actually don't have a "Signature Dish". I almost feel lacking that I SHOULD have one. Like WTH kind of Chef are you? =/
There are dishes that people request from me a lot though:
For breakfast, people like like a Double-Baked Brioche French Toast with Almond Creme and Disaronno Reduction Glaze. I also do a Home-Smoked Kiawe Rosemary Bacon that I cut Thick (~1cm) and pan fry so its crispy on the outside and tender inside that people like also. Macadamia Nut Creme Pancakes, but that's not actually mine.
People also request that I do variations on my Beer Braised BBQ Baby Back Ribs a lot. And I get requests for Dry-Aged Prime Rib a lot too, though I can't say that's signature either. Or a Dungness Crab Lasagna with Cognac Mornay Sauce. Galbi Jjim too, people tend to want me to make that. There's also my family recipe Niuroumian that gets a lot of requests too.
I can't nail down one specific dish though. =/
Mine would have to be either my chicken parm or "holy fucking hell this pie is rich but delicious" triple chocolate pie :D
The chicken parm simply because I make it so often. But I make it because people love it. Chicken parm is simple, and omnomnom and just happy food. :D And the pie, well, it's just sweet like I am :D :D :D
Chicken and noodles and peanut butter bars. So yummy. When Christmas rolls around I'm known for kick butt caramels.

I don't get to cook, but I can make decent spaghetti.
Hmm...I don't really have anything that's entirely "mine" persay. But I guess people typically associate me with cheesecake or chocolate cake, since those are probably what I'm best at.

Macaroni Extreme!!! It's different every time. I modify it to who ever is around. If someone likes a lot of cheese I use a lot of cheese. If they like chicken I use that. If they like mushrooms I put those in. So I guess it's not just my dish, it's any one who is around as well!

@xjadersx@xanga - You know, this is actually probably the reason why I don't have a "Signature Dish" :) Because I believe in cooking FOR the person you're cooking for -- meaning I would rather make someone something that they love than cook them something that I like to make.
So like you with your Macaroni, I tailor whatever it is I'm making to whoever I'm cooking for -- and that becomes what I like cooking. Food = Love after all, and in that, it's not about me -- it's about them :)
This is why I always ask people about what foods they like, what they don't like; so I can keep a cooking profile in my head for that person, and whenever I cook for them, I can do it the right way FOR them.
And I'm no Fancy Chef :P Just like to cook for people and share the Food Love. :)
@chow - It's more a general "Jane makes cheesecakes" thing, rather than being known for a specific one. I tend to stick to baked cheesecakes, but I like experimenting with styles/flavors so I usually don't make the same cheesecake more than once or twice.
My signature dish is the microwaveable stuff.
My mom and I make the best blueberry cheesecakes. It's a team thing. I don't think either of us has done it completely without the other.
As for me though, that would have to be my cheese omelets. Lol. Everybody just loves it. I don't know why! They're just eggs, people! xD

My Dad's Ham and Scalloped Potatoes recipe. He taught me how to make it when I was just a little girl, and I have very distinct memories of sitting on his lap and cutting up the potatoes and ham with him. I am making it Sunday for some friends in his honor :)
I have a stroganoff recipe of my own that I first started making when I was in college. For years, it didn't have a name, but I finally gave it one -- Seduction Stroganoff.
Yes, there is a story behind the name.
Yes, it involves a girl.

I make a spicy unique enchilada sauce that my mom taught me and usually for parties I'm asked to make my tortilla pinwheels and better than anything cake (I add my own twist to that one too).
