  • Recipe: Raisin Tea Muffins

    Raisin Tea Muffin with hint of spices

    This muffin is great for breakfast, the lunch box, an after school snack or tea time.  It is easy to make, easy to transport and quick to bake.  All you have to remember is to combine all the dry ingredients in one bowl, the wet ingredients in another bowl and combine them without over mixing.  Over mixing will yield tough muffin.

    This Raisin Tea Muffin has just the right sweetness and has a mild tea flavor with hint of spices. Perfect with a cup of chai tea.

    Ingredients

    • 1 teabag
    • 1/2 cup boiling water
    • 1 cup raisins
    • 1/2 cup brown sugar
    • 2 teaspoons lemon juice
    • 1 egg, beaten
    • 1 cup flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • a pinch of cinnamon, nutneg, cardamon and cloves.

    This recipe yields 6 muffins.

    Instructions

    Raisin-Tea-Muffin-12Preheat the oven to 350F.  Combine the flour, baking powder, salt, cinnamon, nutmeg, cardamon and cloves in a bowl and mix well.
    Raisin-Tea-Muffin-11Combine the teabag, raisns, brown sugar, lemon juice and boiling water and let sit for five minutes.  Remove the teabag and mix in the egg.
    Raisin-Tea-Muffin-13Add the dry ingredients into the wet ingredients and mix to combine.  Do not over mix.
    Raisin-Tea-Muffin-14Prepare a muffin tin by greasing and dusting with flour.  Spoon batter into a prepared muffin tin and bake for 20 minutes or until a toothpick inserted into the center comes out dry.Knock out the muffin immediately and let cool on a rack.
