
The weather has been just about perfect for tomatoes this year. I'm still picking three or four a day. I never get tired of toasted bacon and tomatoes sandwiches. Breakfast this morning was no exception, and this time I used Canadian Back Bacon and homemade buns.
Here's the recipe for the buns:
1 1/4 cup water
2 tablespoons butter
1 large egg
1 teaspoon honey
4 cups flour all-purpose Flour
2 teaspoons salt
1 tablespoon yeast
Egg wash ( 1 Egg beaten with 1 teaspoon water)
sesame seeds/poppyseeds
Mix and knead all of the dough ingredients by hand, mixer, or bread machine to make a soft, smooth dough. Cover the dough, and let it rise for 1 hour, or until it's doubled in bulk.
Gently deflate the dough, and divide it into 8 pieces. Shape each piece into a round 1" thick (more or less); flatten to about 3" across. Place the buns on a parchment covered baking sheet, cover, and let rise for about an hour, until very puffy. Brush lightly with egg wash (1 egg beaten with 1 tablespoon water), and sprinkle with poppy seeds and/or sesame seeds. Bake the buns in a preheated 375°F oven for 20 to 25 minutes, till golden. Cool on a rack.

Those sandwiches would go great with just about any bread. The first thing that popped in my mind was Texas toast.
