Help! Cooking Emergency
I am making a cake from scratch tomorrow. Since my husband needs to avoid sugars, I did my research. After skimming through a variety of different cake recipes, reading tons of reviews, I found a cake that looks like it will not compromise nutrition for flavor.
My problem? Well, the recipe uses beets. Yep, you read that right. I said beets. I hate beets, but I know veggies are a lot more versatile than you'd think. Normally, I'd not go within a foot of a beet, but for my husband's health, I'll eat them gladly. Too bad I have no idea how to prepare them to be cooked let alone how to know when a beet is done enough to mashed.
I can handle the mashing part. I am an expert masher, as matter of fact. My question is, how do you prep and cook beets?

I have only ever baked beets whole. I guess you could bake, remove outer portion and hand mash or whip. I would love to hear how this comes out since my father is in the same situation as your husband.

Beets can be cooked like potatoes. I'd boil chunks of peeled beet for about 45 minutes, check their texture, and if soft enough, use a standard potato masher.
Another method may work. If you own a juicer, juice the beets, then use the leftover solids, most of which will be finer than you can mash them. Add back the liquid into the recipe in place of water.
Beets have abundant nutrition.
Beets can be cooked like carrots as well.
i have never prepared/cooked beets..but good luck and hope all is well with the baking process :D
I hate beets. I've eaten them about twice in my life and they taste too nasty for me. Good luck with your dilemma.
Boil the beets whole, when tender, drain and cool. the peel will slip off easily. Keep in mind that beets have a very high sugar content.
