From Novice to Professional Cake Baker!
I am so very very proud of myself because my cake turned out lovely and it's a big improvement from my first cake : )

My first cake
Chocolate cake with chocolate icing, crushed almonds, and some sweet heart shaped strawberries on the side.
My second cakeVanilla-cocoa twist cake with vanilla and cherry icing on top. This time I made my own frosting!
I think this cake would have turned out better if I used fondant or gum paste, but are those edible? What is gum paste? I've seen the results from fondant. It makes such beautiful cakes and it seems less messy to use fondant than frosting.I also made some vanilla cupcakes...it looked appealing but not as light and fluffy as I expected. I don't know why my cupcakes never turn out the way I want it to, probably because I work the batter too much. I wonder if there is a way to stop my fluffy cupcakes from turning into hard muffins. I heard a tip to only mix 12 times, but the ingredients aren't mixed in well then.

Lol, you're so cute. Very nice cake!
I use a handmixer on low for 30 seconds and then medium for 2 minutes for cake and cupcakes. It adds air to the batter and l always get the lightest fluffiest desserts. Also, make sure the cupcake pans are cooled between batches. I'm not completely sure why, but that also seems to make a difference.

It looks good! I know for sure Fondant is edible, not too sure about gum paste though. But anyway I know that to get the best result, you would use icing first as a glue and then put the fondant on over it. lol I learned that from Cake Boss =D

Yummmmmmy! Maybe you should try cutting the top of the cakelayer to make it even, and then flip the cake over so that the crumb-y side will be in the middle. That way, the top of the cake will be nice and flat.
