The Perfect Summertime Lunch
Would you believe I made this?
And it took less than 10 minutes.
I washed and cut Romaine lettuce into bite sized pieces, then scattered a bunch on the bottom of my plate.
I cut radicchio into strips and tossed that on top of the Romaine lettuce.
I opened a jar of pitted Greek kalamata olives from Trader Joe's and tossed some of those around the plate as well.
I also opened a jar of dolmas, or stuffed grape leaves (also from Trader Joe's), and took three out to place around the plate.
I threw some grape tomatoes on the plate as well.
Then I crumbled some Greek feta over the top of everything, trying to be as even as possible with the distribution.
After all that, I poured some Italian vinaigrette all over the salad, and began eating. (Well, I took a picture first, obviously!)Oh, and the bread? Also from Trader Joe's - par-baked ficelle, so before I began anything else, I popped that in my toaster oven at 375 degrees, and pulled it out, sliced it in half, then swiped on a little butter. "Freshly baked bread" in just minutes without any of the work!
The perfect summertime meal, really! And honestly, you could get every ingredient here, inexpensively, at Trader Joe's (although I'm not sure about the radicchio, everything else, for sure, is available there). I love that store!

Omg... yuuuuum.
you know you can make your own greek salad dressing, better than store bought sodium-filled italian. i mean, since you have olives & feta (classic greek). I don't even use a recipe. it's just off the top of my head: olive oil, dill, oregano, lemon juice, & some pepper. sometimes i just sprinkle extra stuff like paprika for fun.
@liquid_s@xanga - so you don't use store's salad dressing. That sounds good and healthy. I hope I can make my own too. Do you use fresh dill and oregano?

it is quite complex,and need to prepare some ingredients.it is unbelievable this lunch does not takes a long time to prep :)
