  • Wrap it Up: Recipe for Lettuce Wraps



    One of my favorite appetizers when I go out to eat is lettuce wraps--I find myself craving the versions that TGIFridays and Houlihan's sell to their hungry customers.  But, as I can get around a kitchen just fine on my own, I like to make these for my hungry in-laws and grad school friends who don't cook very much.  They're pretty easy, and definitely worth the time they take to make them.  This recipe is my own creation inspired by my favorites, so enjoy!

    Ingredients:

    3 boneless skinless chicken breasts
    1/2 c. chopped mushrooms
    1/2 medium-sized onion, chopped
    1/3 c. chopped red peppers
    2 cloves garlic, minced (my husband and I looove garlic)
    1  tablespoon  canola oil
    1  tablespoon  dark sesame oil
    1 tablespoon  rice vinegar
    1 tablespoon  low-sodium soy sauce
    1 1/2  teaspoons  chili garlic sauce (such as Sriracha)
    1 teaspoon  ginger
    1 tablespoon brown sugar
    Cooking spray or virgin olive oil
    8  Boston  or romaine lettuce leaves (about 1 head)
    1  lime, cut into 8 wedges
    Chopped peanuts (optional)
    Red pepper flakes (optional)

    1.  Cube chicken breasts, and cook on medium high with cooking spray or oil, stir-frying until browned.



    2.  Add onion, red peppers, garlic, to chicken.  Cook lightly for about 3 minutes.



    3.  In a separate bowl, combine seasame oil, vinegar, soy sauce, garlic sauce, ginger, and brown sugar.



    4.  Add liquid mixture to chicken and veggie and let them heat all the way through.  Remove from heat.



    5.  Once the chicken mixture has cooled for about ten minutes, put it into a food processor (you may have to do a little at a time), and chop it coarsely.



    6.  Take chopped mixture and spread onto lettuce leaves, garnishing with lime, peanuts, and red pepper flakes as desired.



    Serve them with a yummy Asian main dish like curry or cashew chicken.
