Weird Recipe of the Day: Salmon Cupcakes
"Man, you know what I love? Seafood. You know what else I love? Cupcakes. They're so cute. If only there were a way to combine the two...hey, I know..."
Whoever had this line of reasoning at the Food Network needs his head examined.
Salmon Cupcakes
Recipe:- 1 cup cornmeal
- 1/2 cup self-rising flour, sifted
- 3 tablespoons granulated sugar
- 1 egg
- 1/2 cup buttermilk
- 6 ounces finely chopped smoked salmon
But wait! Don't forget the matching salmon frosting!Frosting:
- 1 1/2 cups cream cheese, room temperature
- 1/2 cup chopped fresh chives
- 1/2 cup capers
- 1/4 cup julienned smoked salmon
In the final step, you are encouraged to garnish your fishcakes with strips of smoked salmon, for that Martha Stewart touch.
How many of these are you going to bring into the office for a coffee treat?

And the "frosting" sounds just like smoked salmon dip that people eat with crackers.
I think this was probably from the episode of "Dinner Impossible" where Chef Irvine had no control over the menu. It was the episode at Yahoo, where the computer randomly took the top ingredients searched and matched it up with the top recipes searched - and unfortunately was matched up with salmon cupcakes. He did the best he could!

This sounds more like a cornbread/corn muffin than a cupcake. It doesn't sound too bad, really.
There is just one problem. You left out the baking instructions -- what temperature, how long, etc. Also, how many cupcakes/muffins does this make?
If the "frosting" were mashed potatoes instead of cream cheese (???) I would totally do it.
