  • Experiment: Quesadilla Pizza!

    My boyfriend decided he wanted pizza for dinner, and all we had was tortillas, cheese, and a squeeze bottle of pizza sauce. We decided to improvise.

    We made two pizzas. He made one simple thin crust, just cheese and sauce on one tortilla, and baked it.

    I made another far more delicious one where we made a quesadilla (melted cheese between two tortillas for anyone who doesn't know), and then made the pizza on top of it.


    The simple pizza on the left, and the quesadilla frying on the right. I only fried one side, and I added the toppings onto the grilled side so the bottom wouldn't end up burnt.


    I wanted vegetables on my pizza, so I sautéed some thinly sliced yellow zucchini, some eggplant, and some asparagus, which was all I had on hand. I figured it would take too long to cook them on on the pizza without burning the thin crust.

    Then assembly time!




    Oh, and we added some garlic powder, basil, and oregano to jazz up the boring sauce.

    We popped it in the over at 350F and waited until the cheese melted.


    TA DAAAAA!


    The cheese inside was extra melted and hard to pull apart, but it worked as a glue to form the stronger crust, versus the single tortilla pizza which flopped around dangerously with the weight of the cheese.


    Taste test!

    The quesadilla pizza with veggies was far superior to the single tortilla 'thin crust' pizza. It's also more of a meal, definitely more filling. All in all, it was quick, easy to make, and only required cheese, tortillas, sauce, and whatever toppings you desire!
