  • Fruit Salsa with Cinnamon Sugar Tortillas



     
    NOTE:
    These are real recipes that I have tested personally and enjoyed with my wife and, on some occasions, other family members. Because I enjoyed making the dishes, I want to be able to share with you, my Xangan family, some of them; hence, Gar's Kitchen is born!

    ALTERNATE NOTE: I am not now, nor have I ever been, a nutritionist, and, as such, I cannot provide you with the nutritional information for each of my dishes. But I do know the deliciousness information for them... and they are all 10's. Always.

    Fruit Salsa is a sweet take on the classic tomato-based salsa dish. I made it on a whim (when I happened to have all the ingredients here) and, ultimately, found it to be quite refreshing overall. Here's how I did it...

    I stated out by dicing up the vegetables required for it: 2 green onions, 1/4 a green pepper, and 1 jalapeno pepper. I got them all to a uniform size and mixed them in a bowl together.

    Then, the fruit... 1 mango (in place of the "called for" pineapple, which I don't like and the wife is allergic to), 3 kiwi, 1 orange, and a good handful of strawberries. Once I got those to a uniform size as well, I added them to the previously chopped up veggies, and was left with one ingredient to add: 1 tablespoon of lime juice.

    Mix it all together, and I had my fruit salsa. Now, what to dip in that bad boy...

    I grabbed some whole wheat tortillas. From there, I brushed it with some melted margarine, and sprinkled it with a sugar/cinnamon base (more sugar than cinnamon). Once a tortilla was done, I would cut it into 8 pieces and spread them out on a baking sheet. From there, pop them in the oven at 350 degrees for 5-10 minutes, just enough for them to get good and crispy and browned.

    And there you have it... Fruit Salsa and Cinnamon-Sugar Tortillas!
