  • I Love My Sushi Cupcakes!

    Today is Brittany's birthday and I made her some cupcakes!

    I think these are the best cupcakes I've made yet... so yay! She got good ones.

    From putting ingredients together to making the cake to the designing them... I'm going to say it took about 3-4 hours. Well worth it!

    And I sewed her a Mr. Cupcake. He's not a real food... but he's still a cupcake! I love cupcakes!

    This easy recipe serves 8:

    Ingredients

  • 1 box yellow cake mix
  • Icing
  • 1 1/2 cups sour cream
  • 3/4 tsp. vanilla
  • 4 1/2 cups shredded coconut
  • 3/4 cup powdered sugar, sifted
  • Decoration
  • 8 green fruit roll-ups fruit snacks
  • assorted candies (jelly beans, gummy worms, gummy fish)
  • papaya and mangoes (dried)

Cooking Directions

  1. Before icing and decorating, bake cupcakes according to box mix.
  2. Icing
  3. In a medium mixing bowl, combine the sour cream, vanilla and coconut.
  4. Add the powdered sugar to the mixture and mix thoroughly.
  5. Using a butter knife, spread the icing over the tops of the cupcakes.
  6. Decoration
  7. Trim the Fruit Roll-Ups to the height of the cupcakes. Wrap one fruit roll around the side of each cupcake.
  8. Arrange the dried papaya and candies on the tops of the cupcakes.
  9. Serve the dried mangoes on the side to resemble ginger.
