Prosciutto and Mozzarella Wrapped Asparagus: A Recipe in Pictures...
I don't know what possessed me to want to cook tonight as I haven't in ages, but I made prosciutto and mozzarella wrapped asparagus! I got this recipe from a friend and have only made it once before for a party, but it was a big hit.
Here are the ingredients:
- 1 bunch asparagus
- 1 ball fresh mozzarella
- 3/4 pound prosciutto
- 1 lemon
- salt and pepper to taste
1. Wash the asparagus and trim off the hard edges.
2. Slice the mozzarella into thin strips.
3. Saute the asparagus in some olive oil for a couple of minutes. Add salt, pepper, and lemon to taste.
4. Wrap 2 asparagus stalks and mozzarella using the prosciutto.
Voila! These are super easy to make and are sure to be a hit at any party. You could also put basil in them, like my husband does.

Ummm.......what are those red things? I mean, it doesn't get my taste buds going but I'll try anything once and I'm pretty sure it'll taste good because my taste buds don't discriminate.

At my house, it's usually just cooked with black bean. Ah, now I want some asparagus...
Whenever my family had parties, we'd always make prosciutto wrapped asparagus, no questions asked! We did use the pickled asparagus though (you can usually find them as specialty stores...) and it gives the asparagus a bit of a tart hint which goes amazingly well (almost too well, haha) with the prosciutto. They key here is to get really nice prosciutto (ie: freshly sliced at the counter, not pre-packaged) so it's not crispy or heaven forbid, dark brownish. *shudder*
I know, I'm a food snob, but I love it haha.

I made these for a snack just now. OMG...
It's easy and delicious. Even my WWF-loving room-mates liked it. Be careful, though.. Proscutto tends to be expensive. I'm going to try it with bacon and baking them next week.
